Double Fluffy Pancakes With Strawberry Syrup

So Fluffy These Pancakes Have Been Mistaken For Pillows.

Admit it you have had a food dream involving soft and fluffy pancakes. A dream where no matter how much you eat the stack of pancakes never shrinks. The visions of fluffy, buttery, and syrup coated goodness dance in your head. Most times I imagine you reach for a box of pancake mix. Do you realize how simple it is to make a great fluffy pancake? This pancake recipe is a winner in so many ways it hits the mark of the perfect pancake profile (taste, texture, fluff, and weight).

Double Fluffy Pancakes

  • 1 cup A.P flour
  • 2 tsp. Baking Powder
  • Pinch of Salt
  • 2 tbsp. Granualated Sugar
  1. Combine dry ingredients in bowl
  • 3/4 cup plus 2 tbsp milk
  • 1 egg beaten
  • 2 tbsp melted butter
  • 1 tsp. Vanilla
  1. Combine wet ingredients and mix.
  2. Add wet ingredients to dry ingredients and mix just until combined. Do not over mix as it will deflate your pancakes.
  3. Allow batter to rest for 30 minutes.
  4. Ladle out the batter onto a preheated lightly oiled griddle or heavy bottom skillet or cast iron pan.
  5. The pancake is ready to flip when the bubbles in the batter have stopped appearing and the edges of the pancake have started to dry out.
  6. Turn the Pancake over gently and don’t bother with the theater flip made for tv. This can deflate your pancake.
  7. Give your pancake a few minutes to cook after you flip.
  8. Adjust heat for the next batch if necessary.
  9. Serve Hot.
These pancakes are so delicious and don’t require much effort.

Strawberry 🍓 Syrup

Strawberry syrup and pancakes are a great pairing.
  • 1 cup strawberries diced
  • 4 tbsp white sugar
  • 3 oz water
  • Simmer strawberries until they break down about 10 minutes.
  • The color will also change to a more vibrant red to reflect the transformation.

Hot Cocoa Brownies

This brownie makes you warm and cozy and gives you all the feels.

Standing in my kitchen gazing at my pantry with the hankering for a sweet treat. It dawned on me that a brownie would be a nice fix. I’d be willing to bet that most kitchens have everything you need to make this epic brownie. There was not a box harmed in the making of this recipe. The secret to this recipe was Nestle Hot Chocolate packets. The flavor of hot chocolate always brings back memories of treasured times.

Recipe for amazing brownies below.

  1. Flour – 1cup
  2. Sugar- 1 1/2 cup
  3. 1/2 t. Salt
  4. 1/4 t. Baking Powder
  5. 1/2 t. Cinnamon
  6. Hot Chocolate ( I used Nestle) 9 packets
  7. Butter – 1 stick
  8. Eggs – 3
  9. Vanilla- 1 T
  • Preheat oven to 350
  • Combine melted butter, egg, vanilla, and sugar.
  • Mix remaining ingredients
  • Add dry ingredients slowly to wet ingredients
  • Mix only until combined
  • Pour into greased 8×8 pan
  • Bake for approximately 30 minutes until a toothpick is out comes out clean.

What you top the brownie with is your choice. Ice cream or melted chocolate drizzled all over the brownie work spectacularly.

To finish my sweet treat I made a hot cocoa glaze.

Hot Cocoa Glaze

  • 1 cup Powdered Sugar
  • Teaspoon Vanilla
  • 1/4- 1/2 cup milk
  • Hot Chocolate 4 packs ( I used Nestle)
  • Combine ingredients with a whisk
  • Top cooled brownie

You can now proceed with enjoying your delicious and super amazing brownie.

Super Tasty Beef Stew with Herb Cheese Flat Bread

Comfort food to the core. A great beef stew is a winner any day of the week

A cold winter day craves the delicious and delightful dish “beef stew”. The magic ingredient in a good beef stew is allowing the dish the time to develop the flavors and turning your meat into a succulent bite of goodness. I’ve seen it before to bypass the time people try to cook at a high temp and what they do is stress the meat out, not allow the flavors to develop, and quite often cause the fibers in the meat to act like rubber bands.

Beef stew will surely fill your home with aromas that will tickle your senses.
  • To Make the stew you need
  • Beef such as London broil or top round ( 2#)
  • Onions- 1 ea. Diced
  • Carrots -3-4 chopped
  • Celery – 3-4 stalks chopped
  • Red potatoes – approx 10-15 ea. Whole or halved
  • Garlic Cloves – approx 6 minced
  • Crushed tomatoes -1 can
  • Tomato Paste – 4 oz can
  • Fresh Herbs like sage, basil, rosemary, oregano, and thyme- to taste
  • Beef Broth or Beef Stock- 1 box
  • Salt – to taste
  • Pepper – to taste
  • Paprika – to taste
  • Cumin – to taste
  • Chili powder
  • Flour – to coat meat

The measurements of your ingredients don’t need to be specific amounts. The thing you want to do is taste your food and adjust as you go. The great thing about cooking a recipe like beef stew is to let taste be your guide.

  1. Coat meat in flour seasoned with salt, pepper, paprika, cumin, and chili powder. Be generous
  2. Sear the meat using a little oil in your pot. After it’s been at room temperature for about an hour.
  3. Remove the meat and let sit
  4. Saute vegetables
  5. Add tomato paste
  6. Add beef stock and simmer
  7. Add crushed tomatoes
  8. Add meat back
  9. Add herbs
  10. Bring to a boil and reduce to a simmer
  11. Cook for several hours on a low simmer
  12. Adjust seasoning
  13. Remove meat and dice. Cut against the grain.
  14. Serve with rice or mashed potatoes.

A good accompaniment to the beef stew is a nice crusty bread to soak up the delicious stew gravy. Nice focaccia is a good choice too. For this beef stew, I made a quick herb cheese flat bread.

Top your dough with a variety of ingredients.

To make the flat bread.

  • 1/2 cup Greek yogurt
  • 3/4 cup self rising flour
  1. Use a dough hook or mix by hand until the dough comes together.
  2. on a floured surface roll dough into a ball.
  3. Brush with olive oil
  4. Cover and let rest 20 minutes
  5. Roll out dough
  6. Top with ingredients – for this I used olive oil, mozzarella cheese, Italian herbs
  7. Bake in preheated 400-450 degree oven for 12-18 minutes
Delicious compliment to beef stew.

Peanut Butter Banana Rice Krispy Cookies

They say you can have too much of a good thing! I disagree with that notion. Sometimes more of a good thing just makes life a little bit sweeter.

Cream 4oz butter and 1 cup brown sugar
Add 4oz peanut butter and 1 banana
Add 1 egg, and 2 teaspoons vanilla. Mix well
Add 1&1/2 cup flour, 1 cup rice krispies, 1/2 teaspoon salt, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon. Mix just until combined.

Preheat oven to 350 degrees. While you wait for the oven to reach temperature place cookie dough in cooler to chill.

Drop dough by spoonfuls or using a scoop. Bake for approximately 10 – 15 minutes.

The finished cookie is moist and delicious. It has all the goodness of banana bread in a cookie. For a tasty variation add another cup of rice krispies and half a cup of marshmallows.

Imagine a dinner filled who oohs and ahhhs. This doesn’t have to be a dream. This could be your night to shine. The best part is it doesn’t require many ingredients and time and salt and pepper plus some onions and beer do most of the magic. If you make this dish and give it the time it needs to slow cook you will not be told to pack your tools and go! The 3 biggest mistakes made with short rib are 1) Cooking it at a rapid boil or high heat for to long. This can stress the fibers in the meat and make it tougher. 2) not seasoning the meat enough. 3)Not using a liquid such as beer or wine and opting for water.

Simmer for a few hours so the meat gets fork tender

Short ribs pack a ton of flavor that comes directly from the amount of fat in this cut of meat. When you think of meat for the most part you almost always want to retain a good amount of fat. What happens is as the fat heats it renders and melts through adding irreplaceable flavor. It also marries with your pan drippings to create a glorious sauce.

The other good thing about short ribs is they pair well with many different types of starches and vegetables. I did a ratatouille style roasted vegetable and twice-baked potatoes. Garnished with delectable roasted grapes and fried spinach.

Season with salt and pepper
Coat evenly with flour this helps with browning as well as the thickening the sauce
Sear all sides for color and flavor
You can chop your herbs or add whole. Just remove the stems before serving.
Adding the beer and wine builds more layers of flavor and aids in making meat tender.
Give the meat time to achieve the tenderness you deserve.
Don’t rush a good thing. Work on the sides while the meat is getting happy.
