Baked Dijon Balsamic Chicken served with Arrabbiata Vegetables and Garlic Sage Rice

This made a pretty good marinade

Chicken was pan seared before entering the oven topped with arrabbiata sauce bread crumbs and fresh mozzarella

Sautéed up some vegetables and finished with the arrabbiata sauce

It was a good dish that went we together. The spice of the arrabbiata went well with the chicken and vegetables.

Al Pastor & Sweet Potato Enchiladas

Al Pastor in Enchiladas just makes sense

It started like any other trip to the store. I went with one plan and left with all the ingredients for Al pastor and Enchiladas. What happened next was culinary magic combine the 2 for mouth watering Enchiladas and create dinner magic.

Sauteed the sweet potatoes with bacon, because it makes it even better for your palate

Added Al Pastor to the party

Fired up some chili power because when the fire it’s the chili enchanted things happen to the flavor

Rolled in tortillas with queso fresca and enchilada sauce on top

Plated and ready to go!
